Being raised in a small town, gluten-free pizza was just not a thang, y’all. My momma made everything from scratch with yeast. I guess we were just downright spoiled, but I’ve got to tell ya….this no-yeast recipe tastes like yo’ momma’s homemade version! No lie.
Gluten-Free Pizza Recipe:
Pizza Dough:
- 1 c. tapioca flour
- 1/3 c. coconut flour
- 1/4 tsp. salt
- 1/2 c. canned full fat coconut milk
- 1/4 c. butter
- 1/4 c. water
- 3 cloves of garlic
- 1 egg
Place a pizza stone in the oven, and heat the oven to 450 degrees.
~In a mixin’ bowl, whisk together the tapioca flour, coconut flour, and 1/4 tsp. salt.
~In a small pan, heat the coconut milk, butter, water, and garlic over medium heat. Remove from the heat just as it simmers.
~Add the hot liquid ingredients to the dry ingredients and mix to combine. Let the mixture cool a lil’ bit.
~In a small bowl, whisk the egg. Add the egg to the batter and mix well; let the mixture sit for 5 minutes.
~Spread the dough in a thin layer on the parchment paper the size of the pizza stone. Carefully transfer the dough on the parchment paper to the hot pizza stone.
~Bake for 5-7 minutes then remove and add some sauce if you’d like along with all your favorite pizza toppings. Place back in oven and bake for 10-15 minutes (or until crust is a golden color).
