Whether it’s Christmas or not, this colorful combo of red and green is sure to be the hit of the party! This Lookin’ Like a Summer Christmas Salad Recipe is the perfect combination of seasons and foods. Layer it in a beautiful glass dish or serve it on a handmade pottery plate, and eat away to your heart’s desire.
Summer Christmas Salad Recipe:
- 2-3 red beets, peeled and cut in cubes
- 2 c. spinach
- 2 mini red bell peppers, sliced
- 1 watermelon radish, cut in triangles
- 1/2 c. cilantro
- 1 avocado, sliced
- 1 T. chia seeds
- 1 T. avocado oil
- 1 T. balsamic vinegar
- Salt and pepper to taste
Preheat oven to 425 degrees. Add red beets, avocado oil, and balsamic vinegar to medium bowl. Toss beets until coated with oil and vinegar. Place on baking sheet lined with foil; then roast for 20-25 minutes until beets are fork tender. Chill in refrigerator for 15-20 minutes.
Arrange your fresh sliced veggies, sprinkle chia seeds on top, and serve it with extra virgin olive oil and vinegar or a lil’ extra balsamic on the side.
P.S. – I’ll let ya in on a little secret…it’s extra de-lish in the summer with a side dish of watermelon! And of course, it still follows in the salad’s color palette…which is important to us! Ain’t that right, girls?!!
